After taking over the farm, Olav realized that he was making good cider every year, but that would not be enough to keep a competitive edge.

“I found myself thinking a few years ago that this has to be able… we have to be able to optimize these processes.”

He was aware of the importance of process control in the fermentation stage, which involves understanding the permafrost that goes into the cider. He also learned that there are thousands of known types of apples and yeasts, and each combination of these can create a different cider but also make it very challenging to maintain consistency.
